Spinach & Artichoke Guacamole:

1 tablespoon olive oil

1 clove garlic, minced

1 tablespoon red onion, diced

5 ounces spinach

1- 15 ounce can artichoke hearts

2 avocados

1/4 cup corn

1/4 cup cilantro, chopped

2 teaspoons lime juice

1/8 cup cotija cheese

salt to taste

tabasco to taste

steps:
