quinoa fried rice – watch the video!

I made this dish when I felt like binging on a huge bowl of Chinese takeout…but didn’t want to feel disgusting afterward. It is the perfect fix for a salty takeout craving, while still remaining relatively healthy and protein-packed!

Here is how I made it:

Quinoa Fried Rice Recipe:

1/2 cup dry quinoa

1 cup low sodium chicken broth

about 3 large carrots, chopped

1 small onion, or half a large onion, chopped

1/2 cup frozen peas

2 eggs

2 tablespoons olive oil

1 teaspoon minced garlic

2 tablespoons low sodium soy sauce

chopped scallions (optional)

steps:

1. Cook the quinoa with chicken broth according to package.

2. In a large pan, sauté the garlic with 1 tablespoon olive oil. Add the onion and carrots and stir over medium heat until browned.

3. Add the cooked quinoa to the pan, and push all ingredients to one side of the pan.

4. In the open space, add the 2nd tablespoon of olive oil, and scramble the 2 eggs.

5. Mix everything together, and add the peas and soy sauce.

6. Sauté for about 2 more minutes, and serve!

    Camille and Oliver LOVE shrimp fried rice. Do you think I could make it with Gulf of Mexico shrimp with quinoa and have it come out tasty? It does sound healthy!

      Yes!!! I’m sure it would be delicious- you can just sauté the shrimp up in the pan with some garlic and soy sauce! Yum!
