raw veggie chopped salad

This is one of my favorite healthy lunches to make at home. The hummus, nuts, and avocado are packed with nutrients, and help keep me full for hours. Feel free to chop up any vegetables you have in your fridge, and come up with your own favorite combinations!

Here is how I made it:

Raw Veggie Chopped Salad Recipe:

About 3 cups romaine lettuce (or your lettuce of choice)

1/2 avocado, chopped

About 1/2 cup each: garbanzo beans, corn, bell pepper, cucumber, tomato

About 1/4 cup each: slivered almonds, raisins, scallion

1/4 cup of your favorite hummus

1 tablespoon lemon juice

salt and pepper to taste

steps:

  1. Chop your lettuce and all your fresh vegetables.
  2. Combine all vegetables, almonds, and raisins in a bowl with your lettuce.
  3. Drizzle the salad with the lemon juice and olive oil, and season with salt and pepper to taste.
  4. Add a dollop of hummus on top, and enjoy!!
